Cooking big-eye snappers with preserved turnips is a quick and easy home cooked dish. The resulting fish broth is very delicious and packed with flavour!
Ingredients
2 Big Eye Snappers
65 g Preserved turnips
1 Shallot
5 Ginger Slices
1 Garlic Clove
1 Tbsp Oil
½ Tsp Salt
800 mL Water
Method
1. Soak preserved turnips with water for 10 minutes, drain well, cut into small cubes and set aside.

2. Remove the guts from the big eye snappers, rinse with water and set aside.

3. Pan fry ginger slices, chopped shallot and garlic clove until fragrant, then add the big eye snappers.

4. Add preserved turnips and water, simmer over medium heat for 8 min.

Notes
There is no need to descale the big eye snappers.
