Smoked Salmon Salad

Smoked salmon salad is a quick and easy appetiser! The green salad and cucumber with balsamic vinegar is refreshingly crunchy and also great for spring lunch or super quick dinner.
 

Ingredients

  • 150 g Mixed Greens

  • 35 g Rocket

  • 100 g Smoked Salmon

  • 130 g Cucumber

  • 160 g Avocado

  • 1 Tsp Ground Black Pepper

 

Sauce Mix

  • 80 mL Balsamic Vinegar

  • 25 g Olive Oil

  • 1 Tbsp Lemon Juice

 

Method

1. Cut the cucumber (130 g) into slices and avocado (160 g) into cubes.

2. In a bowl, mix mixed greens (150 g), rocket (35 g), balsamic vinegar (80 mL), lemon juice (1 tbsp) and olive oil (25 g) and mix well.

3. Add ground black pepper (1 tsp) and mix well.

4. Cut smoked salmon (100 g) into segments and add on the salad to serve.
