Vietnamese Rice Paper Rolls

Rice paper rolls are low calorie and healthy appetisers, prepared by wrapping a variety of vegetables and ingredients with rice papers. They are served with a home made sweet and sour sauce.
 

Ingredients

  • 5 Rice Papers

  • 10 Shrimps

  • 60 g Vietnamese Sausage

  • 110 g Rice Vermicelli

  • 30 g Lettuce

  • 50 g Cucumber

  • 35 g Carrot

 

Sauce Mix (Rice Vermicelli)

  • ¼ Tsp Fish Sauce

  • ¼ Tsp Sesame Oil

 

Sauce Mix

  • 1 Chilli

  • 2 Garlic Cloves

  • 1 Tbsp Fish Sauce

  • 2 Tbsp Vinegar

  • 1 Tbsp White Sugar

 

Method

1.Cut the carrot (35 g), cucumber (50 g) and Vietnamese sausage (60 g) into strips, blanch for 1 min and set aside.

2. Blanch the rice vermicelli (110 g) for 1 min and drain well. Mix it with fish sauce (¼ Tsp) and sesame oil (¼ Tsp) and set aside.

3. Soak rice paper (5 sheets) in water for 15 sec. Wrap lettuce, carrot, cucumber, Vietnamese sausage, rice vermicelli and shrimp with rice paper into rolls and cut in half.

4. Prepare the sauce mix by mixing chopped garlic (2 cloves), chopped chilli (1 pc), vinegar (2 Tbsp), white sugar (1 Tbsp) and fish sauce (1 Tbsp).

  • The ingredients can be selected according to personal preference.
