Braised Pork Knuckles with Preserved Plums

These braised pork knuckles are moist, tender, flavorful and contain a great deal of collagen. They are braised in a slightly sweet, sour and savoury sauce with preserved plums.​
 

Ingredients

  • 1 kg Pork Knuckles

  • 4 pcs Preserved Plums

  • 2 pcs Tangerine Peel

  • 2 pcs Cinnamon Sticks

  • 5 Garlic Cloves

  • 30 g Ginger

  • 1 Shallot

  • 15 g Rock Sugar

 

Sauce

  • 3 Tbsp Light Soy Sauce

  • 2 Tbsp Dark Soy Sauce

  • 1 Tbsp Oyster Sauce

  • 2 Tsp Shaoxing Wine

  • 500 mL Water

 

Method

1. Blanch the pork knuckles (1 kg) for 10 min.

2. Stir fry the ginger (30 g), garlic (5 cloves) and shallots (1 pc).

3. Add the pork knuckles, stir fry for 5 min.

4. Add water (500 mL), Shaoxing wine (2 tsp), light soy sauce (3 tbsp), dark soy sauce

(2 tbsp) and oyster sauce (1 tbsp), simmer for 5 min.

5. Add preserved plums (4 pcs), tangerine peel (2 pcs), cinnamon sticks (2 pcs), stir fry for 5 min.

6. Add water to cover 90% of pork knuckles.

7. Cover and simmer over medium heat for 1 hr.
