Butadon is a very popular fast food. It is a pork donburi similar to gyūdon, consisting of a bowl of rice topped with pork and onion simmered in a sweet dashi sauce.
Ingredients
250 g Pork Belly Slices
1 Onion
2 Hot Spring Eggs (Onsen Tamago) (Recipe Here)
2 Bowls of Rice
Sauce Mix
3 Tbsp Light Soy Sauce
2 Tbsp Sake
1 Tbsp Mirin
1 Tbsp White Sugar
1 Tsp Dashi Granules
150 mL Water
Method
1. Prepare the sauce mix with sake (2 tbsp), mirin (1 tbsp), white sugar (1 tbsp), light soy sauce (3 tbsp), water (150 mL), and granulated dashi (1 tsp).
2. Slice the onion (1 pc).
3. Blanch the pork belly slices (250 g) in boiling water for 1 min.
4. Place the onion, pork belly slices and the sauce mixture in a pan. Cover with a lid and simmer over medium heat for 10 min.
5. Evenly place the pork belly slices, onion, sauce mix and hot spring egg on steamed Japanese rice to serve.
Notes
Chicken powder could be used to substitute granulated dashi.
