Hot and spicy rice cake, also known as dukbokki, topokki, ddeokbokki and tteokbokki, is one of the most popular Korean street foods. It is delicious comfort food made with chewy rice cakes and fish cakes in a spicy sauce and dashi stock.
Ingredients
250 g Rice Cake
160 g Fish Cake
600 mL Water
8 g Dried Anchovies
5 g Dried Kelp
Sauce Mix
3 Tbsp Hot Pepper Paste
½ Tbsp Hot Pepper Flakes
½ Tbsp White Sugar
Method
1. Prepare the seasoning paste by combining hot pepper paste (3 tbsp), hot pepper flakes (½ tbsp) and white sugar (½ tbsp).
2. In a shallow pot, add water (600 mL), dried anchovies (remove head and guts) (8 g) and dried kelp (5 g), bring it to a boil and simmer over medium heat for 20 min.
3. Remove the anchovies and kelp from the stock. Add rice cake (250 g), fish cake (160 g) and seasoning paste.
4. Bring it to a boil and simmer over medium heat for 20 min or until the sauce has thickened.
