Red Bean Soup

This is a classic sweet soup made with red beans and tangerine peel. It is super easy to make and often served as dessert in Chinese restaurants.
 

Ingredients

  • 300 g Red Beans

  • 2 g Tangerine Peel

  • 110 g Brown Sugar

  • 2500 mL Water

 

Method

1. Soak tangerine peel (2 g) with water for 30 min, cut into two pieces and set aside.

2. Rinse red beans (300 g).

3. Bring a pot of water to a boil, add red beans, cover and simmer over high heat for 3 min, rinse with water, then drain and set aside.

4. Bring a pot of water (2500 mL) to a boil, add tangerine peel and red beans, cover and simmer over medium heat for 45 min.

5. Gently press the red beans and then add brown sugar (110 g), cover and simmer over low heat for 25 min.
