Sake Steamed Clams

Sake steamed clams is a popular dish in Japanese izakaya. This is a quick and easy recipe to steam clams with Japanese rice wine which perfectly brings out the sweet and umami flavour of the fresh clams!


  • 600 g Clams


Sauce Mix

  • 10 g Bonito Flakes

  • 600 mL Water

  • 200 mL Sake

  • 1 Tsp White Sugar

  • ½ Tsp Salt



1. Prepare a basin of water, add salt (1 tbsp) and clams (600 g), rest for 1 hr, drain and set aside.

2. Boil a pot of water (600 mL), add bonito flakes (10 g), turn off heat and cover for 2 min.

3. Boil the dashi stock, add sake (100 mL) and clams, simmer over high heat for 8 min.

4. Add salt (½ tsp) and white sugar (1 tsp). Turn off heat, then add the remaining sake (100mL) and serve.
