Steamed coconut milk pudding is great home made dessert. They are super silky with very smooth texture and full of coconut flavour!
Ingredients
2 Coconut
4 Eggs
1 Tbsp White Sugar
130 mL Milk
120mL Coconut Water
Method
1. Microwave milk (130 mL) for 2 min with a microwave oven at 180W.
2. Hit the bottom part of the coconut with a knife until a crack appears. Extract the coconut water and set it aside. Cut the top and bottom part of the coconut shell. Place the coconut shell in a small bowl and steam over medium heat for 5 min.
3. Separate egg white (4 pcs) from egg yolk, mix the egg white with coconut water (120 mL), milk (130 mL) and white sugar (1 tbsp).
4. Strain the egg mixture through a sieve and add to the coconut shells. Steam over medium heat for 20 min then turn off heat and cover for 10 min.
Notes
Since all coconut has different water content, make sure the ratio between coconut water and milk is the same.
